I’m Back with a Plan {Healthy Mama Challenge Week 37}

So much has happened in the past few weeks that I’m not going to take the time to recap it all here right now.  Life has been full and busy.  My uncle passed away, we got a dog, and I drove myself and the boys to Virginia to spend some time with family.  I’m still processing everything that has been and I will be sharing bits and pieces of everything as I work through it all.

But for today, I kind of just want to talk about getting back to normal.  With life being crazy lately I’ve been longing for routine.  Routine in my schedule and routine in my diet in particular.

Last night I sat down with my husband and we had one of those big old diet discussions and planned out our meals for the week.  We each outlined what we wanted and found we were in similar places which is good.  Here’s what’s on our menu for this week:

Breakfasts: Egg Muffins {I’m thinking of doing a pepper & cheese variety this time}

Lunches: Salads {lettuce, tomato, onion, celery, cheese, chicken for him & Copycat Maggiano’s Chopped Salad for me}

Dinners: One Pan Balsalmic Chicken & Veggies

Avocado & Grilled Chicken Chopped Salad w/Skinny Chipotle Lime Ranch

Cheater’s Oriental Chicken Salad (I’ll be posting this recipe soon!)

Garlic Parmesan Salmon Foil Packs (We will be having this twice)

Grilled Shrimp & Baked Parmesan Zucchini

Sesame Garlic Chicken & Green Beans (I’ll share this recipe too once I see if it turns out!)

As you can see we are trying to incorporate a whole lot of vegetables and cut down on the amount of carbohydrates.  We’re not eating low-carb but we both feel that carbs are like cryptonite for us and so we are seeking to still allow ourselves a few but the focus will be on filling up with vegetables and lean proteins.  I just completed the shopping this morning and I’m very excited.  Am I the only one who comes home from the grocery store and wants to eat all the meals like right now?

As for exercise we are looking to incorporate more walking into our routine.  I find running a bit difficult to fit in our schedule right now so I’ll be exploring other methods of exercise to complement the walking that might fit better into my routine for now.

I'm sorry to hear about your uncle's passing. That's such a tough time for a family. I can understand the need to get back to routine after that. And congrats on the new dog! My husband and I sit down and meal plan as well, and it makes such a big difference in our attempt at healthier eating. Your meal plan looks delicious!
