Welcome to week 2 of the Healthy Mama Link-up! Today I’ve got a little progress report on how I’m doing and a recipe for you too. Don’t forget to check out the posts from other bloggers linking up.
Diet
On Monday I shared our meal plan for the week. We’ve done very well sticking to the plan during the week, but the weekend was a bit trickier. With two sick kiddos the energy to cook wasn’t really there for either of us. But on Monday we got right back on track. Something that we are really loving for breakfasts are egg muffins. I got the recipe for last week’s muffins from The Way to His Heart. This week we tried a variation on them that I’m really loving- Broccoli Cheddar Egg Muffins. Here’s the recipe:
Broccoli Cheddar Egg Muffins
- 10 eggs
- 1/4 cup of onion, diced
- 1/2 cup of broccoli, diced
- 1/4 cup mushrooms, diced
- 1/2 cup of shredded cheddar cheese
- salt and pepper to taste

- Spray your muffin tin down with cooking spray. Preheat the oven to 375 degrees.
- Whisk together the eggs, then mix in the veggies, salt, pepper, and cheese.
- Pour the mixture into the muffin tins, dividing evenly between 12 muffin tins.
- Bake for 25 minutes.
These are awesome because once they cool you can put them in the fridge and just heat them up in the microwave when you’re ready to have them. I love that I can get up in the morning and have a great breakfast (with veggies in it to boot) that is ready in seconds. Based on my (rough) calculations, the muffins are about 85 calories each.
Exercise
I ran on Monday! I feel like putting a million exclamation points after that exclamation, but that would be a bit excessive. Mentally I was not dialed in enough to make myself do it last week, but Monday I finally did and it was glorious. I mean, I looked like a hot sweaty mess alternating intervals of running and walking, but the weather was perfect and I felt triumphant, as evidenced by this selfie from Instagram. My neighbors probably think I’m crazy…
Last night I did Pilates (hello, abs) and today I hope to run again.
Weight Lost
I weighed in this morning and since last Wednesday I have lost 1.2 pounds. That’s 0.7% for the week. Since beginning 2 weeks ago I have lost 3.2 pounds (1.8 %) overall. I have a few weight loss goals-
- Get to a healthy BMI (7.8 pounds to go)
- Get to my pre-pregnancy weight (9.8 pounds to go)
- Get to my pre-marriage weight (14.8 pounds to go)
- Total Weight Loss Goal {Get back to my ideal weight} (24.8 pounds to go)
I certainly did not have the biggest loss this week, but I am thankful to be moving in the right direction- I’m eating much healthier and being more active, which is success in my book, no matter how much weight I lose!

Glad you're enjoying the breakfast muffins. I love them for a quick, healthy snack. 10 months after my second child was born and I've been a total slacker with weight loss this time around. Time to get into gear myself! Good luck with yours!
