Healthy Mama Challenge 2.0 [Week 4]

It’s Tuesday which means it’s time for an update on my healthy mama challenge.  If you’ve not seen one of my updates before basically it’s my challenge to myself to get back to being a healthy mama.  You can read more about it all in my first post a few weeks ago.

It’s actually been 2 weeks since I checked in… we have had a busy week or so due to a health issue with a family member and so I really haven’t had much time or energy for blogging… or making healthy meals… or working out.  So that brings me to my goals update-

Weight loss goals- I lost 0 pounds this week.  I didn’t loose but I didn’t gain either.  So not a win but not terrible either considering how much we have had going on.  Here’s where I now stand on my weight loss goals-

  • Get to a healthy BMI (25 pounds to go)
  • Get to my pre-pregnancy weight (28 pounds to go)
  • Get to my pre-marriage weight (33 pounds to go)
  • Total Weight Loss Goal {Get back to my ideal weight} (43 pounds to go)

Nutrition and Fitness goals- We’ve been grabbing a lot of quick meals while out and about and with the extra stress our choice have been less than stellar.  But things have calmed down a little the past couple of days so yesterday I grocery shopped and did some healthy meal prepping.  So I’m hoping we can get back on track this week.

  • Eat consciously (Not so much.)
  • Get in some walking every day (We’ve been exhausted so this hasn’t happened.)
  • Workout 4 times per week (I did not work out.  Fail)

Life is sometimes crazy and I’m ok with things staying the same for me this past week.  This week like I said, I hope we can stay back on track and fall into a regular routine for a good while with healthy cooking and working out.

Looking forward to a little more of this and a little less of fast food on the go.

When I feel craziness is stirring all around me, my go-to dinner is crockpot shredded chicken. I put 3-4 frozen chicken breasts in the crockpot with a few squirts of BBQ sauce and a splash of Claudes marinade (no more, there will plenty of juice from the frozen chicken), put the lid on, set to low and go for 8+ hours. Come back shred and you can have BBQ chicken sandwiches. OR you can add some taco seasoning with a lil water, grab a box of taco shells and have chicken tacos, with your side of Uncle Ben's Spanish Rice.

Crockpot shredded chicken is so versatile! I need to use it more. Thanks for sharing!

It's so hard when life is busy. I pick a few of my slowest moments in the week and make extra food that I can just reheat when it's busy. The weeks I haven't done that spiral badly quickly.

Yes! That extra food prep is essential. I did some of that last night so we should be good to go the next few days.
