My older son is entering kindergarten tomorrow (ahhh!!!!) and it’s the first time I will be packing lunches for him on a regular basis. I’m making a list of lunch ideas so that I can easily have a regular rotation of ideas that gives him some variety and I can put together easily.
This morning I’m sharing the recipes for what I like to call “cold cut sushi rolls”. I would like to show how you can put together some of your kid’s favorites into little roll-ups that they will love to eat.
Roll #1: Roast Beef & Cheddar with Cucumber
Step 1: Peel and slice a cucumber into sticks.
Step 2: Lay down two pieces of roast beef and then put a cheddar slice on top.
Step 3: Place the cucumber sticks on one end and roll the beef and cheese around them as you roll it all into a log.
Step 4: To keep the log together push a few thin pretzel sticks through.
Step 5: Slice the long roll into smaller rolls and put 2 into your kid’s lunch.
Roll #2: Turkey & Colby Jack with Pepper
Step 1: Do all the same steps as the Roast Beef & Cheddar Roll but substitute with turkey, colby jack, and slices of peppers.
To make my cold cut sushi rolls I picked up Castle Wood Reserve® meats and cheeses at my local Walmart.
