cold cut sushi rolls 8 pinMy older son is entering kindergarten tomorrow (ahhh!!!!) and it’s the first time I will be packing lunches for him on a regular basis. I’m making a list of lunch ideas so that I can easily have a regular rotation of ideas that gives him some variety and I can put together easily.

This morning I’m sharing the recipes for what I like to call “cold cut sushi rolls”.  I would like to show how you can put together some of your kid’s favorites into little roll-ups that they will love to eat.

Roll #1: Roast Beef & Cheddar with Cucumber

Step 1: Peel and slice a cucumber into sticks.

Step 1: Do all the same steps as the Roast Beef & Cheddar Roll but substitute with turkey, colby jack, and slices of peppers.

Have any great lunch ideas for me?  I’d love to hear them.  All you lunch-packing pros should leave me some of your best ideas in the comments.
