Like many of you I am working on my health this year and one major focus of mine is to eat more vegetables. Did you know that only about 1 in 10 Americans eat the daily recommended amount of vegetables?
I’ve been working on adding in more whole vegetables in all the obvious ways but today I want to talk about adding some more vegetables in a less obvious way- in muffins!
Garden Lites makes some wonderful muffins, all of which are delicious and all of which have extra veggies in them! Also, they are gluten free. AND they don’t taste gluten free. Some gluten free baked goods really don’t taste quite right. These taste great. I fed them to my family and no one could tell they are gluten free.
They make the perfect on-the-go-snack, breakfast, or even dessert. They come frozen and you can heat them up in the microwave for 30 seconds for a delicious sweet treat or you can just defrost them and eat at room temperature, which is perfect for packing in kids’ lunchboxes.
I have tried the Blueberry Oat, Double Chocolate, and Banana Chocolate Chip Muffins and they are all scrumptious. My 5 year old loves the Double Chocolate Muffins and I’m pretty sure he would never guess that they are full of zucchini and carrots.
As a brand the goal of Garden Lites is to help families find new and delicious ways to eat more vegetables. Veggies are the first ingredient in everything they make and all of their products are gluten free. They use clean and simple ingredients and it’s a brand that I can really get behind as a mom.
