As the weather gets warmer I enjoy getting out a doing more of our cooking outside. One of my favorites is grilled chicken and I’m sharing my chicken marinade with you all. To go with my chicken I decided to grill some zucchini and onions. I simply tossed the veggies in a little bit of Mazola Corn Oil, salt, and pepper before we grilled them and they had such a nice flavor. Even my youngest who is a little bit of a pickier eater enjoyed them.
I like that Mazola Corn Oil has more cholesterol-blocking plant sterols than other cooking oils* – 4x more than olive oil, 3x more than vegetable (soybean) oil, and 1.3x more than canola oil. Clinical studies indicate that when consumed as part of a diet low in saturated fat and cholesterol, plant sterols can help reduce the absorption of cholesterol in the gut. This is the Ultimate Chicken Marinade for Grilling but you could also use this to marinade chicken that you plan to cook on the stovetop or in the oven. So if it’s raining or you just don’t have a grill then can still enjoy this delicious chicken.
Ultimate Chicken Marinade for Grilling
- 4-6 chicken breasts
- 1 cup of Mazola Corn Oil
- 2 tablespoons of lemon juice
- 4 garlic cloves, crushed
- 1/2 cup of brown sugar
- 1/4 cup of red wine vinegar
- 1 teaspoon of dried parsley
- 1 teaspoon of dried oregano
- 2 teaspoons of salt
- 1 teaspoon of pepper
Prepare the Chicken
I find that when I grill chicken that it turns out the best when it’s been flattened. So before you do anything get your chicken out, pop it into a sealed plastic bag and pound it all out to make it thinner.
Prepare the Marinade
Place a plastic bag into a bowl. Transfer your chicken into this bag. Combine all the marinade ingredients and then pour it all over the chicken. Seal the bag and put in the refrigerator.
Marinade the chicken for at least 4 hours. Marinade it longer if you have more time.
Grill the Chicken
When you’re ready to grill get chicken out of the bag. Be sure to let any excess marinade drip off of the chicken before putting it onto the grill. Mazola’s high smoke point of 450˚ F is part of what makes it great for grilling or other high temperature cooking like stir frying.
Cook the chicken until it reaches a safe internal temperature of 165 degrees.
