I was only introduced to carnitas a few years ago but since then it’s been on a steady rotation in our home. I like to serve the carnitas in a bowl over rice and everyone can add their own toppings. Using my slow cooker and Minute® Ready to Serve Rice enables me to be ready for the quick turn around between after school activities and dinners on busy nights.

This Slow Cooker Carnitas recipe is such a simple recipe that takes very little prep time. You can prep it all in just a few minutes and then set your slow cooker up to do all the work of cooking the meat.

Slow Cooker Carnitas Recipe

Ingredients

  • 8 lb bone in pork shoulder butt roast
  • 2 Tablespoons oregano
  • 2 Tablespoons cumin
  • 2 Tablespoons salt
  • 2 Tablespoons pepper
  • 5 cloves of garlic, crushed
  • 1 onion, chopped

Steps

Prepare the Meat

Place the pork shoulder butt roast in the slow cooker. Combine the spices and rub them all over the meat.

Then toss the garlic and onions on top.

Cover with the slow cooker lid.

Cook the Meat

Cook the meat on low for 8-10 hours, until you can break it apart with a fork.

Shred the Meat

Take the meat out of the slow cooker and discard the bone and fat. Take two forks and shred the meat.

Make the Rice Bowls
