We love a good grilled chicken thigh. Grilling is just some of the most magical cooking in my mind’s eye. There’s just something special about what it does to food. Thighs are one of my favorite cuts of chicken to grill so we worked this summer on coming up with a grilled chicken recipe that would work well with thighs and so I’m sharing our Great Grilled Chicken Thigh Recipe with you all today!
Ingredients
- boneless skinless chicken thighs (1-2 pounds)
- 4 cups of water
- 3 tablespoons of salt
- 1/2 cup of olive oil
- 8 garlic cloves, minced
- 1 tablespoon of chili powder
- 2 tablespoons of paprika
- 1 tablespoon of parsley
- a few twists of fresh ground black pepper
Great Grilled Chicken Thigh Recipe
Brine
Brining basically just means soaking meat in salty water. For this recipe dissolve the salt in the cups of water. Then put your chicken thighs into a large ziplock bag (1 gallon or 2 gallon size depending on how much chicken you have). Pour the salt water mixture over the chicken and seal it up. I usually do this inside a large bowl so that just in case something happens then raw chicken water isn’t leaking all over my fridge. Let the chicken soak in the brine in the fridge for 2-3 hours but no more than 3 hours or it will be too salty.
Marinate
Remove the chicken thighs from the brine. So typically when you brine you are going to pat the chicken dry but I’m kind of lazy and we like our chicken a little extra salty so I skip that step but you could totally do that. I just take the chicken out of the salt water brine solution and put it into a new ziplock bag to marinate it.
Then mix up the olive oil, garlic, chili powder, paprika, parsley, and pepper. Pour this mixture over the chicken in the ziplock bag, seal it, and kind of massage it into the chicken to make sure it is all covered. Let the chicken marinate for a couple of hours.
Grill
Remove your chicken thighs from the marinade. Grill them until they reach a safe temperature. For poultry that is 165 degrees Fahrenheit. Enjoy!
