Nobody makes food quite like your mama, am I right? I have certain recipes from my childhood that I like certain ways and my husband is the same way. Among many of his mother’s recipes he loves her stuffed peppers recipe. I’ve ever so slightly tweaked it but it’s still pretty faithful to the old recipe. And it’s good. You’re going to want to make it.
To make these Saucy Stuffed Peppers you will need:
- 1 pound of ground beef
- 1 pound of Italian Sausage
- 3/4 cup of rice (cooked)
- 2 eggs
- salt & pepper to taste
- 3 cloves of garlic, minced
- 1/2 of a small onion, finely diced
- 6-8 red, orange, or yellow peppers
- 1 15 oz can of tomato sauce
- 1 10.75 oz can of condensed tomato soup
Step 1: Wash and dry your peppers. Then slice around the top to remove the top. Hollow out the inside, removing all the seeds, etc. If you’ve got a pepper that’s lopsided then a small slice off of the bottom so it will stand up without leaning so much.
Step 2: Mix together the ground beef, sausage, rice, eggs, salt, pepper, garlic, and onion.
Step 3: Stuff the peppers with the meat mixture. Place them into a small pan.
Step 4: Combine the tomato sauce and the tomato soup. Pour over the peppers.
Step 5: Bake for 1 1/2 hours at 350 degrees.

They are a bit messy to eat as you basically destroy them when you slice into them, but the messy meals are often the tastiest ones, aren’t they?
I didn’t grow up eating stuffed peppers like my husband did so initially I didn’t think that I would like this dish but I do. And believe it or not our children do too! Yes, they eat stuffed peppers. Perhaps they gave it more of a chance because I explained that it has a lot of the same ingredients as spaghetti and meatballs. Even if you don’t think you’d like stuffed peppers or if you’re worried that your kids will not like it you should still try this stuffed peppers recipe. It’s hearty, satisfying, and something a little different that a lot of the recipes that we regularly rotate through.
