Fall weather has come and I am ready to tuck into some comfort food but I don’t want to totally throw healthy eating out the door in the cooler months so today I’m sharing ideas for 3 healthy fall meals with you that are all simple, no fuss options. One of them is even a pizza, a low carb pizza at that and I’m so excited to share it with you so let’s get started.
I recently received a Babbleboxx full of wonderful, no-fuss foods for fall that are comforting but have an eye on being more healthful too.
My Babbleboxx was stuffed full of fabulous food items and the first one I want to mention is the RAGÚ® Simply Chunky Marinara Pasta Sauce.
Meal #1: Creamy Pasta Bake Recipe
- RAGÚ® Simply Chunky Marinara Pasta Sauce
- 1 cup of shredded mozzarella cheese
- 4 ounces of cream cheese
- penne pasta
- Boil your pasta and then drain it.
- Add most of your sauce (save 1 cup of it) and the cream cheese to your noodles and mix them all together.
- Ladle the cup of sauce that you saved into a 9 X 13 dish. Then spread out your noodles on top.
- Bake at 350 degrees for 20 minutes.
- Pull out, add the mozzarella cheese on top, and bake for another 5-10 minutes until cheese is melted.
My boys loved this dish! This is a great basic that you could vary up by tossing in some ground Italian sausage or veggies. There are so many great dishes that you can make with this sauce. Try this Quinoa Penne with Savory Tomato-Basil Sauce Recipe or this Cauliflower Crust Mix & Match Pizza Recipe.
Speaking of cauliflower… did you see the noodles I used in my creamy pasta bake recipe? They are Cauliflower & Yellow Lentil Penne from Cali’flour Foods. Made from just those two ingredients they are a high protein pasta that’s grain free, gluten free, and low glycemic.
Cali’flour Foods also makes the Original Italian Cauliflower Pizza Crust. I received a pack of two in my Babbleboxx and my husband was super excited to try them. They have only four simple ingredients: fresh cauliflower, mozzarella cheese, eggs and seasoning. The crust is gluten free, grain free, low carb (6 grams of carbs in an entire crust) and only 180 calories (for the entire crust).
I used my cauliflower pizza crust to make a delicious low carb cauliflower pizza for my husband.
Meal #2: Low Carb Pizza Recipe
- Cali’flour Foods
- low carb pizza sauce
- fresh mozzarella balls
- When you get you Cauliflower Pizza Crust from Cali’flour Foods put it in the freezer.
- Preheat the oven to 375-400 degrees.
- Put the crust on a pizza screen.
- Cook for 10-12 minutes
- Let it cool completely (like 10 minutes)
- Top with the toppings you want. I used pepperoni and mushrooms, my husband’s favorite pizza combo.
- Warm the pizza under the broiler for 1-2 minutes.
You need to try this crust and the penne! I have had a couple of cauliflower pizza crusts and this one by far tastes the best. For someone watching carbs like my husband this helped fill a major craving for pizza while still staying on track. I love that the pizza crust and penne have extra veggies in them that I wouldn’t get from a standard pasta or pizza crust.

Meal #3: Easy Fall Breakfasts
I don’t know about you, but on cool fall mornings I want a hot breakfast! And while I want something warm and filling, I don’t want to overdo it with an unhealthy breakfast so I really appreciate warm, healthy options like Garden Lites Veggie Cakes.
These are like little frittatas packed full of nutrient-rich superfood veggies like kale and cauliflower. They are gluten free and less than 100 calories. Superfood Veggie cakes are a great option for a quick breakfast, snack, or even a side dish. I loved munching on these while starting my day. I also got to try Garden Lites Blueberry Oat Muffins. These are fantastic and have plenty of hidden veggies. You would never believe that the first ingredient is zucchini.
Packed full of blueberries, Garden Lites Blueberry Oat Muffins are allergy-friendly, gluten-free, dairy-free, nut-free, and only 110 calories. They make the perfect on-the-go-snack, breakfast, or even dessert. They come frozen and you can heat them up in the microwave for 30 seconds for a delicious sweet treat or you can just defrost them and eat at room temperature, which is perfect for packing in kids’ lunchboxes.

Cold mornings also call for a nice, warm beverage. I’m not a coffee-every-morning kind of person but in the fall and winter it’s nice to savor a warm drink while waking up. An 11 oz. bag of Red Diamond Classic Blend Ground Coffee came in my Babblebox and I enjoyed a nice, hot cup while cooking.
Red Diamond coffee beans are grown only at a high altitude, hand picked, sundried, and roasted in small batches. I tried it black to really get a sense for what it tasted like since I’ve never tried it before. Red Diamond offers the perfect cup of coffee- they never skimp or cut corners with their coffee or tea production.
Use the store locator to find Red Diamond coffee in store or take advantage of 20% off your Red Diamond coffee purchase online at reddiamond.com with the code coffee2018. This promo code is good until midnight Central Time on 12/31/18 and is 1 use per customer, no minimum purchase.
