Bacon and Blue Cheese Salad & Bacon Vinaigrette

I cannot get enough of bacon and blue cheese lately.  I had this amazing salad at a local restaurant that had a fantastic combo of bacon, blue cheese, and eggs with a bacon vinaigrette and I just had to make my own version at home.  Today I’m sharing my bacon and blue cheese salad recipe along with my bacon vinaigrette that I came up with.bacon and blue cheese saladHonestly, I ate this for both lunch and dinner today.  If you don’t like blue cheese or raw onions then this is probably not the recipe for you.  But if you do like them then you should try this salad for sure.Even if you don’t like bacon and blue cheese try the bacon vinaigrette.  It would be a great dressing for a lot of different salads.

Bacon and Blue Cheese Salad Recipe

Bacon Vinaigrette Ingredients:

  • 4 pieces of bacon
  • 3 cloves of garlic
  • 1/3 cup of red wine vinegar
  • 2 tablespoons of Dijon mustard
  • 1/2 cup of vegetable oil
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 2 tablespoons of honey

Chop up the bacon into tiny little pieces.  Crush or dice the garlic into tiny pieces too, then mix everything together.diced bacon bacon vinegarette dressing in a jarOnce you have made up the bacon vinaigrette then you just have to put your salad together.  You can vary up the ingredients according to your taste but these are my salad ingredients:

  • 10 cups of romaine lettuce (I used two bags of chopped romaine because I was feeling lazy today)
  • 1/2 an English cucumber (you could totally use a regular one but I feel like the English are less bitter)
  • 3 hard boiled eggs
  • 8 slices of cooked bacon
  • 4 ounces of blue cheese crumbles
  • 1/2 of a red onion

salad with toppingsbacon and blue cheese salad bacon and blue cheese saladI love the that combo of the creamy but tangy blue cheese with the savory bacon and the zesty onion.  As I made it all those flavors are very strong so if you prefer to tone it down a little then add in some more mild flavors into the mix like some grilled chicken or change up the proportions so that there’s less onion.
